Christmas cake (1.5 Kg)

  • 250 gm Maida
  • 250 gm Sugar (powdered)
  • 100 gm sugar (caramelised)
  • 250 gm butter
  • 100 gm cherries
  • 50 gm black currants
  • 50 gm kismis
  • 10 gm orange peel
  • 150 gm tutti fruity
  • 1/2 cup rum
  • 4 large eggs
  • 1 teaspoon baking powder
  • 100 gm almonds (optional)
  • 1/2 tin treacle - if dark colour required


1. Cherries, black currants, kismis, orange peel, tutty fruity - Clean cut fine. Add little maida 1 teaspoon garam masala (this qty can be increased/changed).

2. One teaspoon vanilla essence, cream butter sugar add egg whites (blended well) and then yolks. Mix well add sieved maida baking powder mix well, add fruits and nuts and caramel (fry sugar in a pan until dark brown and when it starts forthing add 1 teaspoon water).

Pour this hot mixture into the cake mix mix well, add rum. Bake on moderate heat for 45 minutes or till done.
